- 1 lb ground beef
- 1 onion diced
- 2 cloves garlic, minced
- 1 bell pepper chopped
- 1 14.5 oz can diced tomatoes
- 1 15 oz can black beans drained and rinsed
- 1 cup corn frozen or canned
- 1 packet taco seasoning
- 4 cups chicken broth
In a large pot over medium heat, cook the ground beef with onion and garlic until the beef is browned and cooked through, about 5-7 minutes.
Add the bell pepper, diced tomatoes, black beans, and corn, stirring to combine.
Sprinkle in the taco seasoning, stirring until all ingredients are coated.
Pour in the broth, stirring as you bring the soup to a boil.
Once boiling, reduce the heat to low and let the soup simmer for 20 minutes to let the flavors meld.
