Ingredients

  • 1 lb ground beef
  • 1 onion diced
  • 2 cloves garlic, minced
  • 1 bell pepper chopped
  • 1 14.5 oz can diced tomatoes
  • 1 15 oz can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 packet taco seasoning
  • 4 cups chicken broth

Instructions

  • In a large pot over medium heat, cook the ground beef with onion and garlic until the beef is browned and cooked through, about 5-7 minutes.
  • Add the bell pepper, diced tomatoes, black beans, and corn, stirring to combine.
  • Sprinkle in the taco seasoning, stirring until all ingredients are coated.
  • Pour in the broth, stirring as you bring the soup to a boil.
  • Once boiling, reduce the heat to low and let the soup simmer for 20 minutes to let the flavors meld.
